Classified in the  AOP area of Aix -en- Provence, these olive groves  have been cultivating in a sustainable farming model; pits and skins  of olives remaining after oil extraction, are spread on the fields to fertilize the olive trees.  Handpicked olives are pressed within 12hours after harvest.
