Affiorato Geraci Olive Oil

Extra virgin olive oil

Affiorato, that literally means "what comes to the surface", takes its name from an old manufacturing process used in Italy. The oil being lighter than water, it “showed" on the surface and the nectar obtained had the specificity of being fresh and delicate. Today, Affiorato is the first pressed oil of the year. A unique blend of freshness and power that makes it all its character. This perfectly balanced juice offers an unparalleled finesse in the mouth. This year again, Oliviers & Co has selected the best Sicilian estate to offer gourmets a new oil of absolute rarity and elegance.


This unique olive oil is the result of an early harvest, perfectly mastered by Oliviers&Co. Olives are harvested by hand or using hand tools and are pressed no more than 12 hours after picking.
5 to 6 kg of Nocellara del Belice olives, harvested while they are still green, were necessary to produce 1 liter of this early olive oil. 


You will appreciate this olive oil for its grassy taste profile which imparts the palate with notes of fresh herbs, tomato leaves and fresh cucumber, all enhanced by a touch of fresh almond and green apple.


Like all of our Grand Crus, this olive oil is available in limited edition: only 8000 bottles (8000L) 


Food Pairings: Cooked vegetables, poultry and roasted meats, seafood dishes, St-Jacques or salmon carpaccio, mashed potatoes

The Affiorato 2018 was harvested in the Geraci family estate which, since four generations, passionately produces Sicilian olive oils of exceptional quality. The history of this family, full of passion and rigor, dates back to the 19th century and is linked to olive trees, so the tradition is for every new descendant an olive tree is planted. Massimiliano Geraci now manages the estate. Its recognized know-how is well proven and is awarded every year worldwide.

This year again, Oliviers &Co. has selected a superb olive oil coming from Partanna, in Trapani province, in Sicily, a region known for its green and intense olive oils.
