Caponata - Eggplant specialty

Caponata is the Sicilian ratatouille par excellence !
Prepared according to a regional recipe, the aubergines cut into small pieces are fried and then added to the mixture of tomato sauce, onion, celery, olives and capers.
To give the caponata the typical taste of the Sicilian sweet and sour, a hint of vinegar and sugar are added at the last moment.
Tasting advice: Typical Sicilian dish to be served hot or cold, ideal also to accompany antipasti, burrata, meat or simply a pasta dish.
