BABY LEAF SALAD

BABY LEAF SALAD

Ingredients :

For 6 peoples

400 g of baby leaf salad (mustard, beetroot, rocket, etc.),
200 g of fresh raspberries,
80 g of hazelnuts, 1 tablespoon of O&CO. raspberry vinegar,
100 g of fresh goat’s cheese,
3 tablespoons of O&CO. Grand Cru olive oil from Castillo de Canena (Spain),
2 new onions with their stalk,
O&CO. natural sea salt, milled pepper.

Description :

Remove any dust from the raspberries, but without using water Wash and dry the baby leaf salad carefully, without damaging the leaves.

Peel the onions and stalks and cut them into thin slices. Roast the hazelnuts on a fierce heat for 2-3 minutes in a
dry frying pan, then crush them but leaving large pieces.
Crumble the fresh cheese into a bowl using a fork, add the raspberry vinegar and olive oil. Put the baby leaf salad, onions and hazelnuts in a salad bowl. Season the salad with the mixture (vinegar, oil and goat’s cheese), and serve in six plates. Add a little natural sea salt, milled pepper and scatter the fresh raspberries on top.
