BELL PEPPER & RICOTTA RISOTTO

Ingredients :

For 4 peoples

300 g (about 10.5 oz) O&CO. Carnaroli risotto rice,
1 liter chicken broth,
4 medium shallots,
50 ml (about 1.7 fl oz) O&CO.
Reserved Harvest Italy olive oil,
60 g (about 2 oz) freshly grated parmesan,
O&CO. fleur de sel, O&CO. black pepper, 1 jar O&CO. pesto ai peperoni.

Description :

Bring the water to a boil with chicken stock. Mince the shallots. In a heavy pot, heat the olive oil over medium heat, add the shallots and rice, and sauté until translucent but not brown.
Add a ladle of the hot spiced water and cook, stirring, until the liquid is absorbed. Continue cooking, adding a ladle at the time, until the rice is creamy but still firm. When the rice is done, stir in ½ jar of pesto ai peperoni. Season with salt, freshly ground pepper and the parmesan. Stir and serve immediately.
