FISH TARTARE & GREEN OLIVE CONDIMENT

Ingredients :

For 4 peoples

400 g (about 15 oz) salmon,
400 g (about 15 oz) fresh cod (or other white fish fillets),
6 tablespoons O&CO. balsamic condiment with green olive,
6 tablespoons O&CO. floral extra virgin olive oil,
8 basil leaves, juice of 1 lime, O&CO. olive oil mini-crostini, salt and freshly ground pepper.

Description :

Prepare the tartare 30 minutes before serving. Rinse and mince the basil leaves. Cut the salmon and cod into small cubes and place in a bowl. Add the green olive balsamic condiment, the olive oil, basil, lime juice, salt and pepper. Combine gently until the mixture is thoroughly blended. Refrigerate for 15 minutes until
ready to serve. Serve with the mini-crostini.
