LAMB AND POTATO TAGINE WITH ARTICHOKE & APRICOT RECIPE

Ingredients :

For 4 peoples

  • bunch spring onions
  • 12 small potatoes
  • 1 bunch fresh coriander
  • 1 jar O&CO artichoke & apricot recipe with honey
  • 8 tablespoons O&CO Spain reserved harvest olive oil
  • 2 lemons confit
  • 3 lb (about 1.5 kg) lamb shoulder cut into pieces
  • 1 tablespoon raz el hanout
  • 4 tablespoons O&CO almond honey
  • 2 cups (about 5 cl) water
  • O&CO fleur de sel and freshly ground pepper

Description :

Clean the onions and cut off the green part. Peel and halve the potatoes. Rinse and mince the coriander and combine it with the artichoke & apricot recipe along with 4 tablespoons of olive oil. Rinse the lemons, discard the pulp and chop the skin. Heat the remaining olive oil in a terracotta tagine or a large heavy pot. Sear the meat pieces in the hot oil until lightly brown on all sides. Add the spring onions, raz el hanout, honey and the lemon peels. Stir well and sauté for a couple of minutes. Add the potatoes. Lower the heat, add the water and season to taste with salt and pepper. Cover and simmer over very low heat for 1½ hours. When the meat is very tender and the potatoes cooked through, gently stir in the artichoke & apricot mixture, adjust seasoning to taste with salt and pepper. Cover and simmer for 10 minutes. Serve hot with a raisin couscous.
