MADELEINE WITH LEMON CURD

Ingredients :

For 4 peoples

180 g sugar, 1 tablespoon finely grated lemon zest, 3 eggs, 35 cl milk, 160 g
flour, 6 g baking powder, 75 g unsalted melted butter, 90 ml O&CO.’s lemon specialty,
1 jar O&CO.’s lemon curd, 1 pinch of salt.

Description :

In a bowl, whisk the eggs together with the sugar. Add the flour, the baking powder, the salt, the lemon zest, the melted butter and the olive & lemon specialty. Stir through the mixture until combined well. Cover and leave to rest in the fridge for 30 min. Preheat the oven (Th 7-210°). Generously grease and fill two thirds of the madeleine molds. Bake for about for 8 to 10 min., keeping an eye on them.
Transfer the madeleines to a wire rack and leave for a few minutes until cool enough to handle. Gently loosen the madeleines from their molds. Serve them with lemon curd.
