Ingredients :

For 4 peoples

  • 16 lady fingers
  • 4 very ripe peaches (or 8 apricots or 2 large mangoes)
  • the cream: 300 g (10.5 oz) mascarpone -at room temperature
  • 3 eggs – separated
  • 100 g (3.5 oz) powder sugar
  • the syrup: 80 g (2.8 oz) raw sugar
  • 1 vanilla bean (optional)
  • 10 tablespoons O&CO mango (or apple) fruity condiment
  • 2 tablespoons aged rum
  • 1 glass water

Description :

To prepare the syrup: heat the water and fruity condiment in a small saucepan. Add the raw sugar and simmer for 5 minutes over low heat. Remove from the heat. Halve the vanilla bean and add to the syrup along with the rum. Set aside to cool at room temperature. Peel the peaches (or mangoes) and cut into small chunks. To prepare the cream: in a mixing bowl, beat the egg yolks with the icing sugar until the mixture is pale yellow and fluffy. Add the mascarpone and whisk until the mixture is smooth. Beat the egg

whites to stiff peaks and gently fold into the mascarpone mixture. Dip the lady fingers into the cold syrup and stand along the sides of 4 glasses or verrines. Spoon the cream in the center and top with the cut up peaches, and drizzle the remaining syrup over the fruits. Refrigerate for 20 minutes before serving.
