PEAR, CITRUS & ROSEMARY TART

Ingredients :

For 6 peoples

1 pre-rolled pure butter puff pastry,
3 pears (Beurre Hardy or Comice),
30c l of Earl Grey tea,
1 cm of sliced fresh ginger (optional),
1 pot of O&CO. Exquis,
1 sprig of fresh rosemary, a few strips of candied orange.

Description :

Preheat the oven to thermostat 6 (180°C). Peel the pears, cut them in half, remove the seeds and place them in an oven-proof dish with the scattered rosemary and ginger.

Drizzle them with 5 tablespoons of tea. Line a pastry dish with a sheet of greaseproof paper and add the pastry leaving a 3cm overhang.
Roll the overhang towards the interior of the baking tin to obtain a raised edge a minimum of 1cm thick. Flatten the edges using the prongs of a fork. Cover with a sheet of greaseproof paper and spread out the dried vegetables on top. Place them in the oven together, and bake the pastry for approximately 30 min or until it is dry and golden, and the pears for 20 min or until they are soft in the centre, regularly basting them with tea and turning them halfway through the cooking.

Remove the dried vegetables and the greaseproof paper.
Leave the pastry to cool and drain the pears. Spread a generous layer of O&CO Citrus Fruit Exquis on the base of the tart and add the well-drained pear halves in the shape of a star. Gently make an incision in them using the tip of a knife, drizzle each pear with some of the cooking juices without soaking the pastry and sprinkle on the
strips of candied orange.
