Potato Salad with Olive Oil, Mayonnaise Sauce

Ingredients :

For 4 peoples

  • 1 medium head romaine lettuce
  • 500g (1lb) waxy potatoes
  • 4 hard boil eggs
  • 5 tablespoons O&CO. mayonnaise sauce
  • Coarse salt, O&CO fleur de sel
  • O&CO freshly ground black pepper

Description :

Cook the unpeeled potatoes in a large pot of salted water until tender. Drain and set aside to cool. Peel and coarsely chop the hard boil eggs. Wash and dry the lettuce, and shred the leaves into large strips. Peel the potatoes and cut them into thick slices. In a salad bowl, layer the romaine lettuce, potato slices, eggs and the mayonnaise. Gently toss until all ingredients are well coated. Adjust seasoning with salt and pepper to taste. Serve warm or cold.
