Ingredients :

For 6 peoples

100 g (3.53 oz.) of almond powder,
100 g (3.53 oz.) of fine flour,
70 g (2.47 oz.) of icing sugar,
3 egg whites,
40 g (1.41 oz.) of butter + 20 g of softened butter for the molds,
40 g (1.41 oz.) of olive & green lemon O&CO specialty,
80 g (2.82 oz.) of pistachio Suprême O&CO + 60 g.

Description :

In a salad bowl, mix together the flour, icing sugar and almond powder. Put the butter, olive oil and 80 g (2.82 oz.) of pistachio Suprême in a small saucepan, and then heat gently while stirring to thicken the mixture. Pour the egg whites and the contents of the saucepan into the salad bowl and whip them up until you obtain a thick smooth consistency. Pre-heat your oven to 180°C. Butter 6 muffins molds, and put the mixture into each until they are ¾ full. Place a knob of pistachio mixture on top of each cake, press down gently and put them in the oven for 10 minutes at 180°C. Take the soft cakes out of the oven, carefully remove them from the molds, and enjoy hot or cold.
