ROASTED CHICKEN WITH CHESTNUT & PEAR SPREAD

Ingredients :

For 6 peoples

  • 1 chicken
  • 1 jar O&CO. chestnut & pear
  • walnut-Sichuan pepper spread
  • 6 slices unpeeled pumpkin (you can substitute with potatoes)
  • 1 teaspoon O&CO. fleur de sel
  • 6 tablespoons O&CO. basic olive oil
  • 4 sprigs fresh thyme
  • 6 shallots
  • freshly ground pepper

Description :

Preheat the oven to 350°F (about 160°C).

Rinse the shallots but do not peel. Season the chicken cavity with salt and pepper, and stuff with the thyme.

Place in a large roasting pan and toss the shallots and pumpkin slices around it.

Drizzle with olive oil, season with salt and pepper, and roast for 45 minutes or until cooked to taste, basting often with the cooking juices.

Remove from the oven and coat the chicken with the chestnut & pear jam.

Crave the chicken, drizzle with the cooking juices and serve immediately with the pumpkin, shallots and a green salad.
