Ingredients :

For 4 peoples

1 head of broccoli,
2 carrots,
½ potimarron squash,
1 courgette,
1 red onion, 
½ celeriac,
4 garlic cloves,
O&CO. Rameaux d’Or Olive Oil,
O&CO. Natural Sea Salt (Fleur de sel) from Portugal,
O&CO. Superior balsamic vinegar of Modena,
O&CO.Espelette Chilli (powder),
4 sprigs of thyme,
50 g baby spinach,
50 g rocket,
6 sprigs of chervil,
6 sprigs of dill.

Description :

Pre-heat the oven at thermostat 6, gas mark 4 (180°C). Place a sheet of parchment paper on a baking tray. Wash the vegetables. Separate the broccoli into small bouquets. Peel the carrots, slice them in quarters length-wise, mince the celery and onion. Cut the courgette into round slices. Slice the potimarron thinly, without removing its skin. Scatter the vegetables on the baking tray, add in the unpeeled cloves of garlic, sprinkle everything with olive oil, sea salt, freshly ground pepper, a pinch of Espelette chilli and the stripped thyme leaves. Pour a very small amount of water into the baking tray, just enough to line the bottom, for steam. Cover the vegetables with another sheet of parchment paper and bake for 40-50 min. In the meantime,
wash the baby spinach leaves, the rocket, dill and chervil, pat them dry. Ten minutes before the end of the baking time, remove the top sheet of parchment paper and drizzle the vegetables once again with olive oil.
Allow to cool slightly, arrange vegetables on four plates and sprinkle on the baby lettuce leaves, dill and chervil. Drizzle with O&CO. Olive Oil and O&CO. Balsamic Vinegar of Modena. Finish up with a grind of the
pepper mill and serve.
An O&CO. tip: You can cook all sorts of vegetables in this way. Serve them as a starter, or as a main dish: a warm salad with a few shavings of Parmesan and a soft-boiled egg.
