The Piment d'Espelette, AOC certified since 2000, was introduced in the Espelette commune of the French Basque region in the 16th century.

The cultivation of the peppers took hold in vegetable gardens where they were hand-harvested by women from August to the early frosts. Today, the same harvesting technique prevails and follows the pace in which the peppers reach maturity. They are picked only when they become 80% red.

Often used as a seasoning in lieu of pepper, the spice slight spiciness combined with fruity and toasted aromas impart a very distinct flavor to culinary preparations. Oliviers & Co's Piment d'Espelette has been produced for almost 10 years by Pierre Gassuan in the village of Ustaritz. The slight spiciness combined of the Espelette chili with fruity and toasted aromas impart a very distinct flavor to culinary preparations.
