Vinegar with fresh Shallot

Prepared with whole fresh shallots, this recipe is elaborated within 48 hours after the selection of the ingredients. The intensity of shallots goes wonderfully with the acidity of white wine vinegar, while respecting the balance of flavors.


A simple drizzle of these vinegars with Mediterranean notes, will be enough to revamp daily life and season your salads, marinades or barbecues!


Tasting suggestion : Crustaceans (oysters, shrimps ...) sushi, heart of lettuce, smoked salmon, poached Saint Jacques or grilled meats.

To celebrate the arrival of summer, Oliviers & Co unveils a new collection of aromatic vinegars, developed in partnership with its master vinegar maker Frédéric Chaix according to a unique savoir-faire. To obtain these unique vinegars, ingredients are macerated whole within 48h of their selection, allowing them to retain all their freshness.

A special attention is paid to the ingredients coming from Portugal. No flavourings added. The perfectly controlled maceration of the ingredients and the vinegar favours the capture of flavours without degrading them. Their light filtration then allows the ingredients to express their flavours in the mouth. These aromatic vinegars are the result of research to find the right balance between the acidity of the vinegar and the flavor of the ingredients.
