Rosaria Pinho, the local miller for more than 20 years, knows all the peculiarities of her land.
Today she passes on her passion for the profession to her son Cyril.
At the beginning of November, the olives are harvested at perfect aromatic maturity. They are then pressed the same day in order to guarantee optimal quality. A very artisanal production, all the olives of the estate are cultivated in sustainable agriculture.
