Our 3 lively wine vinegars are produced near Narbonne by a talented young master vinegar maker. These 100% French and artisanal vinegars have a powerful yet delicate taste. We also offer an organic French cider vinegar, which has many benefits and virtues, as well as a wine vinegar with pink garlic from Lautrec.
An artisanal wine vinegar: a unique Oliviers&Co know-how
These artisanal vinegars are made on a base of red wine vinegar elaborated only in French oak barrels and aged from 12 to 18 months. The cider vinegar is obtained by the double fermentation of apple juice (20 varieties) and is preservative-free, unpasteurised and unfiltered.
Production and composition of wine vinegar
To make wine vinegar the process is very similar to that of balsamic vinegar, with a fermentation and ageing phase. However it is possible to use other red wines and grape varieties. Find out more about the making of wine vinegar.
