In the heart of the village of Fornos de Ledra, the Pedra do Olival estate is steeped in a long family farming tradition. While the farm has always been diversified, today the olive tree occupies a prominent place. Olive oil production, launched about ten years ago, is a continuation of a long-standing, patient, and attentive effort centered on the olive tree. A natural process, respectful of a heritage and know-how passed down from generation to generation. The estate covers 35 hectares, divided into plots containing approximately 5,500 olive trees. This demanding and arid terroir favors a modest but aromatic production.
The secret to an exceptional oil lies in the art of observing the olive tree to understand its needs, harvesting perfectly ripe fruit, and then extracting the juice the same day, without ever using hot water during pressing. This Grand Cru can be used in both cooked dishes and simple preparations. A drizzle of oil added to steamed potatoes is enough to reveal all the subtlety of its aromas!
