 AND THE PEOPLE WHO MAKE THEM.

 

Here at Oliviers&Co, traceability is one of our main principles! It is a fundamental part of our selection process of our exceptional oils. That is why, at Oliviers&Co we provide our customer with as much information as possible about our olive oils. Every step as well as the oils flavor profile can be found on each label of our bottles.

 

How to read our labels ?

Oliviers&Co guarantees transparency and quality in its olive oils, highlighting the importance of expertise, close relationships with producers, and the utmost freshness of our vintage grand cru olive oils.

 

 

 

On the front label, you can find a complete identity profile of the selected olive oil through the following information :

The olive varieties predominantly used in the olive oil

∴ The estate name: a true reflection of the terroir and the flavors found in your olive oil. While our oils are bottled at our facility in Mane, we highlight the place where the olives were harvested (whereas many olive oils on the market only indicate “EU origin” or “non-EU origin”).

∴ The name of the producer: behind every olive oil lies the expertise and dedication of a man or a woman with whom we maintain close, long-standing relationships.

∴ The harvest date: a genuine guarantee of quality, as olive oil unlike wine does not improve with age. It is therefore recommended to purchase it in small quantities (½ liter) and to store it away from light. Our grand cru olive oils are vintage-dated, meaning that we never blend oils from different harvest years, ensuring maximum freshness.

 

 

 

 

 

On the back label, you can deepen your understanding of the olive oil you have chosen and find the following information:

∴ The olive oil category: at Oliviers&Co, we offer only the very best—extra virgin olive oil.

∴ The extraction method: cold extraction guarantees the preservation of the olive oil’s organoleptic and nutritional properties (by contrast, most vegetable oils are extracted using heat and then refined, which greatly alters their properties and can even make some of them harmful to health).

∴ All the olive varieties used in the oil: each olive oil is the result of a precise blend, in which each selected olive variety contributes its own distinctive character, giving every oil in the collection a unique flavor profile.

∴ The volume purchased from the producer and the tank batch number: our vintage olive oils are inevitably released in limited editions, and we trace every step of their production.

∴ The oil’s certification, where applicable: PDO or Organic. Depending on the farming method, the region, and the production criteria it meets, some olive oils benefit from a certified designation, which we indicate here. Two-thirds of our collection are certified, although in some cases this cannot be clearly stated.

 

 

 

Why ? A PDO (Protected Designation of Origin) is a European label that guarantees a product has been processed and produced within a defined geographical area. At Oliviers&Co, all our olive oils are bottled in Mane, Provence. As a result, we cannot display the PDO designation for oils sourced from Italy or Spain, even when they are eligible for one.

 

By way of example, the Monva estate is located in the natural park of the Sierra Mágina mountain range. Monva olive oil benefits from the Sierra Mágina PDO; however, we are unable to indicate this on our bottle because the bottling location differs from the place of processing.

 

The traceability of our oils does not stop with the olives. All the components that make up your bottle also originate from the Mediterranean basin: our bottles are produced by an Italian glassmaker, our caps by a Portuguese cork manufacturer, and our labels by a French company. If we are able to be this precise, it is thanks to our full traceability and our network of producers throughout the Mediterranean region.

 

Our 100% traceability guarantee also means having in-depth knowledge of the physicochemical properties of each olive oil at Oliviers&Co.

Precise and rigorous analyses are essential to certify the exceptional quality of our oils. Before being selected, each olive oil undergoes a visual, olfactory, and sensory evaluation, in accordance with a strict technical specification.

What are the criteria required to classify an olive oil ?

Three key factors are particularly assessed in order to classify an olive oil and determine whether it belongs among the finest “grand crus”: the polyphenol content, the acidity level, and the peroxide value.
