Chefs Jacques and Laurent Pourcel A great classic around the green olive, which pays homage to the famous tapenade, revisited with the Pourcel chefs: the crushed blanched almond finely softens the frank flavour of the green olive paste and adds a crunchy texture to this very tasty paste. This creation, inspired by tapenade and transformed into an olivade, is one of the range's favourite olivades because of its perfect balance of taste: it is addictive! Recipe elaborated in Provence with simple ingredients.
Serve simply on toast, to garnish puff pastries or as a finishing touch to a trout.
