There are only two types of Traditional Balsamic Vinegar of Modena DOP: the one that is aged for a minimum of 12 years (this one is the case of this one) and the one that is aged for a minimum of 25 years (called Extra Vecchio", extra-aged). A surprising and incomparable balance of aromas and flavours, making its acidity largely disappear. An intense and brilliant dark brown colour, a fluid and syrupy density and a complex perfume. A few drops are enough.
Thanks to its clean and rich taste, a few drops are enough to sublimate a slice of raw ham, shavings of Parmigiano Reggiano, risotto, baked pasta, seafood and delicate fish, a slice of foie gras, a fillet of beef, poultry, salt-cooked vegetables, fromage frais, sauce, marinade, ice cream, strawberries, etc.

This traditional balsamic vinegar of Modena is obtained from trebbiano grape must that is cooked directly on the fire, uncovered. It is then aged for a minimum of 12 years in barrels made of different types of noble wood. This product of very high quality is certified artisanal and of protected origin (DOP): its origin is guaranteed, as well as its artisanal production. It contains no colouring agents, preservatives, caramels or added sulphites. It is then aged for many years in wooden barrels of different species (oak, chestnut, cherry, ash and finally mulberry). This long ageing process allows it to reach a surprising and incomparable balance of aromas and flavours. A slow process of fermentation and oxidation then follows.
