This red onion confit is made according to a traditional Italian artisanal method.
To obtain this melting chutney, the red onions are very slowly confit in Piedmontese Barbera d'Alba wine and Modena balsamic vinegar. This recipe combines the sweetness of the onion confit with the subtle acidity of the wine.
to be enjoyed with pan-fried or semi-cooked foie gras, red meat or poultry, fried potatoes, to accompany a caramelised pork tenderloin, or all cheeses with character.
