Made from very green Aglandau olives, this AOP Haute-Provence olive oil fully reflects the character of the Provençal terroir. Moulin de l’Olivette delivers an oil that is both expressive and elegant, with pronounced vegetal aromas dominated by notes of avocado, raw artichoke, and fig leaves, evoking the garrigue and sun-soaked landscapes of Haute-Provence.​

On the palate, it offers a pleasant bitterness that structures the flavor, followed by a slightly peppery finish, a sign of freshness and quality.​ This is a balanced, characterful oil, ideal for enhancing dishes. It pairs perfectly with salads, as well as Provençal and Mediterranean cuisine.​

In the heart of Manosque, the Moulin de l’Olivette embodies the art of Provençal olive oil production: refined, expressive, and deeply rooted in the terroir. Founded in 1928, it is one of the oldest working olive mills in the region, where the olive is considered a precious fruit. Its olive groves, which stretch across Manosque and its surroundings, benefit from ancestral know-how passed down through generations. Olive growing is inseparable from the history, culture, and landscape of Provence.

The harvest is carried out with care when the Aglandau olive has reached its full aromatic maturity, often while still green, in order to preserve its natural freshness, intensity, and richness in polyphenols. Cold pressing yields an extra virgin olive oil with a pure, structured, and vibrant profile – an authentic expression of the terroir.
