Oliviers& Co has called upon the expertise of Laurent Faure, a young, self-taught and passionate French master vinegar maker based near Narbonne, to create a collection of high quality wine vinegars.
Indeed, Laurent uses historical processes to make his wine vinegars: he selects wines for their profile and aroma, in this case full-bodied wines from the Languedoc, which he then works in oak barrels in the traditional Orléans method. He allows time (nearly 2 years) and bacteria to do their work naturally, unlike many industrial vinegars that use additives that accelerate the transformation of wine into vinegar in a few hours or days.
Its vinegars are 100% natural with no added sugar, colouring or sulphites.
The aromatic vinegars with Kampot pepper and thyme are also made from natural ingredients, by maceration or diffusion.
