BIO certification is obtained following a long transition process considering health, ecology, and equity. This label has many impacts on the cultivation of olive trees: fertilization must be done with specific fertilizers, the control of parasites is closely regulated. Several French producers with whom we work have implemented an organic approach. This is the case of Gaetan Boyeau at the Galline orchards. Its secret: agroforestry combining the cultivation of olive trees with outdoor rearing in old chicken orchards to create an intelligent ecosystem. This atypical mode of operation whose 2 main allies are time and nature contribute to create a balance where the fruits express all their potential to give birth to a rare oil typical of organic Haute-Provence.
