A balanced and indulgent olive oil

This olive oil from the Trás-os-Montes region stands out for its subtle balance and aromatic richness. On the nose as well as on the palate, it reveals floral and vegetal notes, enhanced by delicate touches of aromatic herbs and fruits such as bergamot.

Perfectly balanced, this 100% Cobrançosa monovarietal olive oil leaves a light peppery sensation at the back of the throat, the signature of its authentic character.

Did you know? The legal acidity level for an extra virgin olive oil must be below 0.8%. This Oliviers&Co Grand Cru goes far beyond this standard with an exceptionally low level of 0.15%. In the heart of the village of Fornos de Ledra, the Pedra do Olival estate is part of a long-standing family farming tradition. Although the farm has always been diversified, olive trees now play a predominant role. Olive oil production, which began around ten years ago, is the culmination of patient and careful work carried out over many years with olive trees. It has developed naturally, respecting a heritage and expertise passed down through generations. The estate covers 35 hectares, divided into plots with around 5,500 olive trees. This demanding, arid terroir favours modest production in terms of volume, but with great aromatic richness.

The secret of an exceptional oil lies in the art of observing the olive tree to understand its needs and harvest perfectly ripe fruit, then extracting the juice on the same day, without ever using hot water during pressing. This grand cru can be used on both cooked dishes and simple preparations. A drizzle added to steamed potatoes is enough to reveal all the subtlety of its aromas!
