It is made primarily from Aglandau olives, hand-harvested at the beginning of the season and immediately cold-pressed. This preserves the full intensity of its vegetal aromas.
Its robust flavor reveals notes of fresh grass, raw artichoke, and fresh almond. Its spicy aftertaste, called "ardence," reveals an exceptionally high antioxidant content.
