The Olive: Pajarera
This little-known variety of olive is native to the province of Cordoba. Its name, which means ‘aviary’ in Spanish, comes from the anecdote that birds like to peck at these olives directly from the tree, a sign of their natural sweetness. This olive produces a mild, balanced extra virgin olive oil with a unique flavour that is not to be missed.
