The production of this "ripe" olive oil begins with the hand-picking of fresh, green olives. The olives then undergo a specific ripening process, with controlled fermentation before being pressed at the mill. This controlled fermentation gives the oil dominant aromas of tapenade, cocoa, and forest floor. Originating from the Manosque region and benefiting from the Protected Designation of Origin (PDO) Provence, this oil is mild, without bitterness or fruity or herbaceous notes. In the heart of Manosque, the Moulin de l’Olivette embodies the art of Provençal olive oil production: refined, expressive, and deeply rooted in the terroir. Founded in 1928, it is one of the oldest working olive mills in the region, where the olive is treated as a precious fruit. Its olive groves, which stretch across Manosque and the surrounding area, benefit from ancestral know-how passed down through generations. Olive growing is inseparable from the history and landscapes of Provence.

This Provençal olive oil, “Olives Maturées” (Ripe Olives), produced by the experienced miller Grégory Lémé, evokes traditional Provençal olive oils, prized for their flavor of perfectly ripe black olives, a taste of yesteryear. Made from green olives, it is fermented in vats in a closed, heated room. The master craftsman meticulously controls the temperature daily, allowing the olives to ferment day after day in the absence of oxygen. The miller then presses the olives, and the resulting olive oil is filtered to remove all impurities and ensure optimal stability. This process preserves the most subtle aromas that give it its distinctive charm: tapenade, sourdough bread, and forest floor. Thanks to its traditional aromas, this olive oil will transport you to another era. It is excellent for cooking potatoes, goat cheese, pizzas, or even—more surprisingly—over chocolate ice cream.
