In the heart of Manosque, the Moulin de l'Olivette embodies the art of Provençal olive growing: demanding, luminous, and deeply rooted in its terroir. Founded in 1928, it is one of the oldest oil mills still in operation in the region, where olives are treated as a noble fruit. Its orchards, spread across Manosque and the surrounding area, benefit from ancestral know-how passed down from generation to generation, where olive cultivation is intimately linked to the history and landscapes of Provence.
The harvests are carefully carried out when the Aglandau olive reaches its full aromatic potential, often while still very green, in order to preserve its vegetal freshness, intensity, and richness in polyphenols. Cold extraction produces an extra virgin olive oil with a frank, structured, and vibrant profile, a true reflection of its terroir. True to its values, Moulin de l'Olivette adopts a responsible approach: using olive pits as a source of energy, recycling by-products, and heating independently. The integration of innovative technologies reinforces this quest for quality while respecting nature.
