Organic Olive Oil Born from a Rediscovered Paradise
North of the Aegean Sea, on the resurrected lands of the west of the island of Lesbos, the Faros Estate is home to the Sigri mill, a model of sustainable and ethical agriculture. On these once-arid lands, more than 40,000 olive trees have been planted, alongside 20,000 other trees and plants, recreating a true ecosystem.
With a golden color with green highlights, this organic grand cru reveals delicate aromas of white flowers, dried flowers, and nuts on the nose. On the palate, its silky texture reveals a beautiful intensity and a peppery touch on the finish. Ideal as a seasoning, it enhances salads, grilled fish, roasted vegetables, or can be enjoyed simply on fresh bread.

On her estate, Maria Tirpintiri cultivates 12 varieties of olives, on trees aged 0 to 15 years, using natural methods without chemical fertilizers. Fertilization is based on a rich compost made from manure, branches from pruning, and especially Posidonia, a local marine algae. These practices make the soil fertile and enriched with essential trace elements while capturing CO₂ in the soil.
This unique farming model supports biodiversity and transforms the environment: flowers, insects, birds, and mammals find refuge here. Today, the estate is a natural paradise, where palm trees, pines, cypresses, eucalyptus, fig trees, pomegranates, and other species coexist harmoniously. Through its practices, Moulin Sigri actively contributes to the climatic balance of western Lesbos, while offering an exceptional product that respects the land and those who cultivate it.
This formerly desert region is now a sanctuary for thousands of birds, insects, and mammals, a true oasis of biodiversity.
